Cauliflower Poppers with Dipping Sauces

These poppers are what I daydream about! They are so insanely delicious, crunchy, munchy little bite-sized morsels! They are a cinch to make, perfect for your Superbowl Party (or really anytime - I don't judge if you want to eat these alone in your PJs)! Plus, did I tell you the best part? They are so healthy - plant based and

made with cauliflower (broccoli is also amazing in this recipe), both cruciferous superfoods with tons of anti-oxidants, fiber, and cancer fighting superpowers! Don't just sit there - make them!

Ingredients:

1 head cauliflower, cut into bite-sized florets (or broccoli)

1 c. almond milk or oat milk, plain, unsweetened

2 tsp. malt vinegar

1 c. flour

1 tsp. garlic powder

1 ½ tsp. salt

1/8 tsp. pepper

2 c. panko

Buffalo Sauce:

¼ c. plant-based butter

1-2 Tbsp. Frank’s Red Hot Sauce, to taste

Sweet Honey Lime BBQ:

½ c. BBQ sauce

¼ c. honey

1 tsp. garlic powder

Juice of 1 lime (1-2 Tbsp.)

Method:

For the poppers:

  1. Preheat oven to 450 degrees F. Line a baking sheet with parchment paper.

  2. Arrange 3 vessels for dredging cauliflower pieces in: first with flour, salt, pepper, and garlic powder, whisked to combine; second with almond or oat milk and vinegar (mixed); and third with panko (start with a little panko and add more as needed).

  3. Dredge cauliflower florets in flour mixture, then dunk in milk/vinegar mixture, lastly coat in panko. Place fully coated cauliflower florets on parchment paper in single layer.

  4. Bake at 450 degrees for 18 minutes.

  5. While baking, make sauces.

For the sauces:

  1. Buffalo sauce: melt plant-based butter in microwave safe dish. Add Frank’s Red Hot Sauce, whisk to combine.

  2. Sweet Honey Lime BBQ Sauce: combine bbq sauce, honey, garlic powder and lime juice in a small saucepan. Heat over medium heat until honey is melted, whisk to thoroughly combine.

Serve poppers with one or both sauces for dipping. Poppers are also fabulous as a filling for tacos: fill corn tortillas with shredded cabbage, diced onion, cilantro, avocado and cauliflower or broccoli poppers (or go crazy and use both). Drizzle Sweet Honey Lime BBQ sauce on top.
