Vanilla Chia Pudding

Easy, delicious and super good for you!  Eat happy!  This overnight pudding is super simple, and perfect for a quick and easy breakfast, snack or even a super healthy dessert!  Omega-3 fatty acids, fiber, calcium and protein give you a jump start to amazing!  I top with nuts and fruit - any combination will do: walnuts and raspberries, almonds and blueberries, pepitas and mango, the choices and combinations are endless!


1 c. milk (I use organic whole milk)

1 c. vanilla Greek-style yogurt (low sugar with no artificial sweetener)

2 tsp. real maple syrup

1 tsp. vanilla

1/4 c. chia seeds  

Fruit and nut toppings


Combine all ingredients in a pint jar.  Put the lid on tightly and shake vigorously until well combined.  Refrigerate.  Shake every 15-20 minutes 2-3 times so chia doesn't clump together.  Refrigerate overnight.  

Makes 4 servings.
